Deze koekjes heb ik van de week gebakken en wat ze zijn lekker geworden! De meel die ik ervoor gebruikt heb, is glutenvrij en ook nog eens gezond!

Het recept heb ik gevonden bij Eatpuurlove blog en hiermee maak je ca. 20 koekjes:
> 100 gr. roomboter op kamertemperatuur
> 125 gr. amandelmeel
> 125 gr. havermoutmeel
> 1 tl vanille-extract
> 1 tl honing
> 1 ei
> 50 gr. pure chocolade in kleine stukjes
> 50 gr. walnoten in stukje gehakt
> snufje zout

Doe de roomboter samen met het ei in de mengkom en mix tot een smeuïge massa. Voeg vervolgens de honing, zout, vanille-extract en de meel toe en meng dit tot een stevige massa. Voeg aan de massa stukjes walnoten en chocolade toe.

Vorm met je handen kleine balletjes van het deeg en leg ze op de bakplaat bekleed met bakpapier of gebruik een silicone bakplaat. Druk alle balletjes plat tot koekjes en bak ze vervolgens 20 minuten gaar op 175 graden in de oven.
